The short answer

When a walk-in cooler or freezer in New Orleans stops holding temperature, the usual causes are a dirty or iced evaporator coil, a failed fan motor, a defrost problem, a refrigerant leak, or a door that no longer seals. We diagnose on the first visit, carry common parts, and treat a walk-in climbing past safe temperature as an emergency.

Signs to watch for

Signs your walk-in needs service

  • Box temperature rising through the shift
  • Frost or ice building on the evaporator
  • Compressor running without stopping
  • Door not closing or sealing on its own
  • Water pooling on the floor inside the box
  • Loud or unusual noise from the condenser
  • Temperature alarm going off

Why walk-ins fail in a hot kitchen

Updated September 2026

A walk-in is a refrigeration system working against a hot kitchen, a humid city and a door that opens hundreds of times a day. Condenser coils on the roof or behind the building foul with grease and debris, evaporator coils ice when doors are left open or defrost fails, and gaskets wear until warm, wet air leaks in constantly.

Most failures give warning: temperatures creeping up through a busy shift, frost building on the evaporator, or the compressor running without stopping. Calling at that point is far cheaper than calling after the product is lost.

Walk-In Not Holding Temperature

When the box drifts warm, we start with the obvious and work in: door seal and closer, condenser coil condition, fan motors, then refrigerant pressures and the compressor. A condenser coil packed with grease and dust is one of the most common causes in restaurant kitchens, and cleaning it can restore temperature the same visit. If the compressor or a refrigerant leak is the problem, we quote the repair and help you plan for protecting the product while it is done. We also record the box and coil temperatures so you have a baseline for the next visit.

Evaporator Icing

Ice building on the evaporator coil inside the box means air cannot pass through it, and the box warms even though the system runs constantly. Causes include a failed defrost heater or timer on freezers, a failed evaporator fan motor, a door left ajar, or low refrigerant. We clear the ice safely, find which of these caused it, and repair it. Chipping ice off the coil with tools damages the fins and tubing, so please do not attempt it before we arrive.

Door Gaskets and Heaters

Worn door gaskets, a door that does not close on its own, and failed door frame heaters on freezers all let warm, humid air into the box. In this climate that air brings a lot of moisture with it, which turns to frost and ice. We replace gaskets, adjust or replace closers and hinges, and repair frame heaters so the door seals every time. It is one of the least expensive walk-in repairs and one of the most effective. We check the strip curtain too, where one is fitted, because torn strips let in almost as much warm air as a bad gasket.

Timing

How long before the box is cold again

Door, fan motor, defrost and coil-cleaning repairs are usually finished on the first visit, and the box starts pulling down within the hour. Compressor and major refrigerant repairs take longer; we tell you the lead time and help you plan where to keep product in the meantime.

When walk-ins fail

Walk-in failures do not keep business hours, and many happen overnight when nobody is in the kitchen to notice the temperature creeping up. Most local shops charge a premium for night and weekend calls. For a walk-in full of stock, that premium is usually worth paying, and we tell you the after-hours cost before we come so the decision is yours.

Cost

What affects the cost of a walk-in repair

Walk-in repairs are priced after diagnosis; these are the main variables.

The failed part

Gaskets and fan motors cost far less than compressors.

Refrigerant

Leak repair and recharge add time and materials.

Defrost system

Heaters, timers and controls on freezers.

Condenser location

Rooftop condensers need roof access.

Timing

After-hours calls carry a premium at most shops.

Box size

Larger walk-ins carry larger components.
